How to Make Caribbean Style Pork Chops and Glazed Peppers for a Delicious Main Course

Whether you are planning a meal for guests or you just want a tasty family meal that is quick and easy, give this delicious Caribbean Style Pork Chops and Glazed Peppers a try.  Served over rice (minute rice works well) with a salad, you have a simple, tasty, meal on the table in practically no time.  Any diabetics in your group can also enjoy this tasty meal without worry.

CARIBBEAN STYLE PORK CHOPS

2 tsp jerk seasoning, divided

4 well-trimmed bone-in center-cut pork chops, about 1/2" thick

1 red bell pepper, cut into 1" strips

1 yellow bell pepper, cut into 1" strips

1 tbsp balsamic vinegar

1 tbsp honey

2 tsp chopped fresh parsley

Preheat oven to 375 degrees.

Sprinkle 1 teaspoon of the jerk seasoning over the pork chops.  Heat a large nonstick skillet coated with nonstick cooking spray over medium-high heat until hot.  Add the pork chops and cook 2 to 3 minutes per side, until browned.  Transfer chops to a shallow baking pan and place in the oven.  Bake 8 to 10 minutes or until no longer pink in the center.

While chops bake, add the bell peppers to the skillet the chops were browned in.  Cook, stirring, over medium-high heat about 3 minutes.  Reduce the heat to medium.  Add the vinegar and honey; cook and stir for 1 minute.  Add another dash of jerk seasoning to the peppers and continue cooking until tender, another minute or two.

Serve the pork chops and peppers over instant brown rice for a quick and easy meal.  Drizzle any juices from the baking pan over the chops.

Note: This is a good diabetic dish as it has more protein than carbs.
